These pears are a delightfully light dessert and so easy to make. “Pair” them up with cake, ice cream and Chocolate Pear Rum Sauce.

Vanilla Bean Poached Pears

Vanilla Bean Poached Pears

1 vanilla bean
¾ cup granulated sugar
6 firm pears cut in half lengthwise, with the seeds removed

1. Cut vanilla bean lengthwise.
2. Remove insides and place in a large pot.
3. Place the vanilla bean pod in the pot,
4. Add sugar and pears.
5. Add enough water to the pot to cover them.
6. Bring to a simmer and cook until pears are soft
7. Remove pears from syrup and cool.
8. Reserve syrup for another use
9. Place in the refrigerator until cold and ready to use
