Vanilla Bean Crème Brûlée

Vanilla Bean Crème Brûlée

Vanilla Bean Crème Brûlée

Serves 4
1 vanilla bean
2 cups 35% percent cream
5 egg yolks from PC Blue Menu Omega-3 Eggs
6 tablespoons white sugar
4 tablespoons dark brown sugar
A torch

1. Preheat oven to 350 F.
2. Cut the vanilla bean lengthwise.
3. Scrape out the centre and place in pot. Add bean pod.
4. Add cream and two tablespoons white sugar.
5. Heat it slowly until it comes to a boil. Remove the pod.
6. In a bowl whisk eggs yolk and remainder of white sugar.
7. Add a bit of the hot cream and stir with a wooden spoon.
8. Add the rest of the cream bit by bit and continue to stir.
9. Place the mixture into ramekins.
10. Place ramekins in a deep dish.
11. Fill the dish with boiling water reaching half way up the ramekins.
12. Bake 40 to 50 minutes. Let cool.
13. Sprinkle some brown sugar on top and brown with a torch or under the broiler.
