This recipe blends tropical fruit with other ingredients you expect to find in a salsa like tomatoes, onions and garlic.

Serve with fish or just dig into it with corn tortillas.

Tropical Fruit Salsa

1 mango, diced
1 cup pineapple, diced
1 cup pomegranate seeds
1 cup tomato cut in small dice
1 red onion cut in small dice
½ a lemon juiced
1 cup coriander leaves chopped
½ cup PC New World EVOO Extra Virgin Olive Oil
1 garlic clove crushed
Salt and pepper to taste

1. Mix together the mango, pineapple, pomegranate seeds, tomatoes and red onion.
2. Add lemon juice, coriander, olive oil, garlic, salt and pepper.
3. Stir well and place in the fridge until ready to serve.
