Thai Salmon Salad

This salad recipe blends cucumbers, onion and peppers in sesame oil for an Asian twist on basic ingredients. Salmon adds delicious protein.

Thai Salmon Salad

Thai Salmon Salad

Serves 4

4 salmon filets
salt and pepper to taste
Olive oil for pan
1 red pepper
½ red onion
1/2 cucumber
4 tablespoons PC Pure Sesame Oil
Juice from 1 lime
1/4 cup cilantro
Toasted sesame seeds to garnish

1. Preheat oven to 400 F.
2. Season salmon on both sides with salt and pepper.
3. Grease a baking sheet with a little oil and place salmon filets on.
4. Cook in oven for 12-15 minutes until no longer pink in the center.
5. Let cool and set aside.
6. Finely chop the cucumber, pepper and red onion and place in a bowl.
7. Roughly chop the cilantro without stems and add to bowl.
8. Add in lime juice and sesame oil.
9. Crumble cooled salmon into small pieces and add to bowl.
10. Mix all the ingredients together and season to taste with salt and pepper.
11. Garnish with toasted sesame seeds when serving.
