Stir Fried Vegetable Beef with Vegetables

Stir Fried Sesame Beef with Vegetables

Serves 4

1 cup Chinese cabbage

½ cup dried black mushrooms

¼ cup olive oil

¼ cup sesame oil

5 garlic cloves

1 pound steak, sliced

3 tablespoons fresh ginger root

3 tablespoons sesame seeds

Salt to taste

¼ cup bamboo shoots cut into thin slices

½ cup celery, cut thin on a diagonal

1/3 cup frozen corn, thawed

2 carrots, peeled and cut julienne

1 cup scallions, slices

Sauce:

½ cup soy sauce

1 1/2 cups PC Blue Menu Beef Broth

¼ cup cornstarch

¼ cup water, cold

 

  1. Cut off the cabbage root and separate the leaves.
  2. Cut thicker leaves into 2 inch chunks. Shred thinner leaves.
  3. Soak mushrooms in enough boiling water to cover.
  4. When mushrooms are soft, drain the liquid from them.
  5. Discard the mushroom stems. Julienne the mushroom caps.
  6. Heat the oil in a wok or large sauté pan.
  7. Add the garlic and cook about 15 seconds to flavor the oil. Discard garlic.
  8. Add the sliced beef to the oil and brown for 1-2 minutes.
  9. Add the ginger, sesame seeds and salt. Cook about 15 seconds.
  10. Add the cabbage chunks and stir-fry 1—2 minutes.
  11. Add bamboo shoots, celery, corn, carrots and scallions. Stir fry for two minutes.
  12. Add shredded cabbage and sesame seeds. Mix well.
  13. To make the sauce combine soy sauce and beef stock in a pot. Heat
  14. In a small bowl combine cornstarch and water
  15. Add to sauce bit by bit, and stir until sauce thickens.
  16. Pour sauce over stir fry and heat before serving.
