Roasted Chicken Cream of Coconut Soup

This soup comes together quickly using one of our rotisserie chicken. Add some bread for lunch or a quick dinner before heading out for the evening.

Roasted Chicken Cream of Coconut Soup

Roasted Chicken Cream of Coconut Soup

2 tablespoons coconut oil
1 cup carrots cut in small dice
1 cup celery cut in small dice
1 cup onion cut in small dice
½ a rotisserie chicken
2 containers PC Blue Menu Chicken Broth
2 sprigs fresh thyme
1 sprigs rosemary
2 sprigs oregano
1 cup corn
1.5 cans coconut milk
4 tablespoons cornstarch

1. In a large pot heat oil on med-high heat.
2. Add carrots, celery and onion. Saute for 5 minutes.
3. Add chicken and broth
4. Add all herbs and salt and pepper, cook for 15 mins
5. Add corn and coconut milk and cook for 10 mins
6. Mix cornstarch with water and add to soup, cook for 5 mins
7. Serve.
