Have some Quick Pickled Vegetables available to eat right from the jar. It won’t be hard to consume your five to ten fruits and vegetables per day! Chef Gilles suggests that you serve these vegetables with Miso Maple Marinated Cod.

Quick Pickled Vegetables

Quick Pickled Vegetables

Serves 4

1 lb vegetable as such carrots, zucchini, cucumber, radishes, beets
1 cup of vinegar (you can mix different flavors)
1 cup of water
2 cloves of garlic
Herbs of your choice
Spices of your choice

1. Wash vegetables well and finely slice them.
2. Place vegetables in a jar.
3. Place water and vinegar in a pot and bring to a boil.
4. Add garlic. Add herbs and spices.
5. Pour over vegetables.
6. Close the lid and set aside for 1 day minimum.
