This recipe was designed by Chef Gilles for an in-store cooking demo. The pork tenderloin is cut before being stuffed with a compote made from apples and onions.

Pork with Apple Onion Compote

Pork with Apple Onion Compote

Serves 4

1 onion, peeled and sliced

4 apples, peeled and sliced

2/3 cup butter

1 cup of PC Honey Crisp Sweet Apple Cider

1 kilo of pork tenderloin

1 pinch of pepper

1 pinch of salt

1/2 cup whole cream

1 teaspoon of thyme

  1. Preheat oven to 375 F.
  2. Cook onion and apple with butter until brown.
  3. Add ¾ cup apple cider and reduce it to a thickened compote. Let cool
  4. Cut the pork lengthwise 3/4 of the way through. Open it up until it lies flat.
  5. Add some apple mixture in the center. Roll pork and tie it. Season
  6. In a hot pan, sear the pork. Then, roast in oven for 5-8 minutes.
  7. Remove pork from oven and pan. Cover with a foil.
  8. Take pan pork was cooked in heat and on stovetop.
  9. Pour in ¼ cup apple cider to deglaze the pan.
  10. Add cream and thyme. Reduce it.
  11. Slice the pork and serve with remaining apple mixture and sauce.
