Miso Maple Marinated Cod

This recipe from Chef Gilles’ collection is the perfect fish dinner. And it uses healthy cod! The chef suggests that you serve it with his recipe for Quick Pickled Vegetables.

Miso Marinated Cod can also be served on baguettes for an appetizer.

Miso Maple Marinated Cod

Miso Maple Marinated Cod

Serves 4

2 tablespoons Miso
2 tablespoons white wine
1 tablespoon apple cider vinegar
2 tablespoons PC 100% Pure Maple Syrup Canada Grade Amber
4 cod fillets

1 tablespoons olive oil

1. In a pot warm miso, wine, vinegar, syrup and spices.
2. Allow to cool.
3. Place the cod in a bowl.
4. Pour the marinade on top and refrigerate for 2 hours.
5. Drain fish and dry it well.
6. Brush oil on fillet and grill it 2 minute each side.
