Irish-Style Coleslaw in Apple Honey Dressing

Irish-Style Coleslaw in Apple Honey Dressing

Serves 4

4 tablespoon PC 100% First-Pressed Canola Oil

1 tablespoon apple cider vinegar

2 teaspoon PC Organic Pure Honey

2 teaspoon Dijon mustard

1 shallot, minced

Salt and pepper

3 medium carrots

2 Granny Smith apple

1 head green cabbage

4 green onions

Juice of 1 Lemon

  1. Combine the canola oil, apple cider vinegar,honey, mustard and shallot. Whisk to form a dressing.
  2. Grate the carrots and apples. Place in large bowl.
  3. Remove the out leaves from the cabbage. Cut cabbage in half
  4. Remove the core. Play each cabbage cut side down, Slice through in thin strips. Add to bowl.
  5. Slice green onions into rounds. Add to bowl and mix.
  6. Add juice of 1 lemon. Mix.
  7. Pour dressing over top. Mix and serve
