Dark Chocolate Arabica Bean Coffee Cups

2 teaspoon Arabica bean espresso
1 litre of 35% cream
ΒΌ cup plus 1 tablespoon sugar
6 yolks
2 egg whites
10 oz of PC Dark Chocolate with 70% Cocoa, chopped finely

1. Infuse the espresso in hot water and reduce on stove top. Cool to room temperature. Refrigerate.
2. Whip cream with espresso until stiff. Refrigerate.
3. Add sugar with a bit of water to a pan, and cook until it reaches 242- 248 F on a candy thermometer.
4. In the bowl of a stand mixer, whisk egg yolks and whites until light and frothy pale yellow.
5. Meanwhile, melt chocolate over a simmering pot. Cool slightly.
6. Whisk your eggs on low speed and slowly pour in sugar.
7. Fold in chocolate with a rubber spatula.
8. Fold in whipped cream.
9. Pipe mixture into ramekins and chill in refrigerator.
