Coconut Ginger Tilapia

Coconut Ginger Tilapia

Coconut Ginger Tilapia

Serves 4

½ cup coconut milk
½ onion chopped
1 tablespoon fresh ginger, grated
½ lemongrass stalk, chopped
1 teaspoon turmeric
1 teaspoon chili powder
1 tablespoon vegetable oil
4 tilapia fillets
Salt pepper
Shredded coconut, unsweetened, to garnish

1. Combine coconut milk, onion, ginger, lemongrass, cumin and chili in a medium bowl and whisk.
2. Add the tilapia and marinate in the refrigerator for 30 minutes.
3. Heat a pan on the stovetop until hot.
4. Add vegetable oil.
5. Remove fish from bowl and place in pan.
6. Reserve marinade.
7. Sear both sides. Season with salt and pepper.
8. Add marinade to pan
9. Bring to a boil and let cook a few minutes.
10. Remove from pan and sprinkle with shredded coconut.
