Classic Bran Muffins

Classic Bran Muffins

Make 12 large muffins

1 cup PC All Purpose Unbleached Flour
2/3 cup wheat bran
2/3 cup whole wheat flour
¼ cup granulated sugar
¼ teaspoon salt
1 tablespoon baking powder
3 eggs
2 cups milk
1 tablespoon PC Pure Vanilla Extract
¼ cup vegetable oil

1. Pre-heat oven to 350F.

2. Prepare tins for 12 large muffins.
3. In a large bowl, mix together all- purpose flour, wheat bran and whole wheat flour.
4. Stir in sugar salt and baking powder. Make a well in the centre
5. In another bowl. Whisk together eggs with milk
6. Stir in vanilla.
7. Whisk in vegetable oil.
8. Slowly add liquid to dry mixture. Using a fork, mixed just until combined.
9. Scoop mixture in a muffin pan.
10. Cook for 15-20 mins.
