This recipe for Cashew Nut Chicken is a variation on a Thai dish calledi Ka Med Ma Muang. The cashews are browned in the same pan, before the chicken, imparting flavour.

Cashew Nut Chicken Recipe

Serves 4

1.5 lb PC Blue Menu Air Chilled Boneless Chicken Breasts, cut in cubes

4 tablespoons corn starch

2 fresh chili peppers, diced

1/2 cup water

1/2 cup soya sauce, sodium reduced

1/2 cup hoisin sauce

1 cup of raw cashew nuts

2 tablespoon vegetable oil

5 garlic cloves, chopped

Fresh ground pepper

1 onion, thinly sliced

1 bunch green onion


  1. Mix chicken with 3 tablespoons of cornstarch and pepper.
  2. In another bowl combine 1 tablespoon cornstarch with water, soya and hoisin.
  3. In a hot pan, lightly brown the cashew with oil.
  4. Remove from the pan and set aside.
  5. In the same pan, sautee the chicken cubes to golden brown.
  6. Remove from the pan and set aside.
  7. In the same pan, with some oil, cook garlic 1 minute.
  8. Add onion and cook 2 minutes. Add chicken and add sauce.
  9. Cook 5 minutes until sauce become syrupy.
  10. Just before serving, add green onion and roasted cashew.
