Blueberry Buttermilk Pancakes

Buttermilk Blueberry Pancakes

Serves 4
1.5 cup all-purpose flour
1 ¼ teaspoon baking powder
½ teaspoon salt
½ teaspoon baking powder
2 teaspoons cinnamon
1 ½ cups buttermilk
¼ cup homogenized milk
3 tablespoons unsalted butter, melted
1 large egg
2 cups fresh blueberries
Extra butter for the griddle

1. In a medium bowl, whisk together the flour, baking powder, salt, baking soda and sugar.
2. In another bowl, combine the buttermilk, whole milk, unsalted butter and egg.
3. Add the wet ingredients to the dry and mix just until combined.
4. Heat the griddle and add butter. Add the pancakes to the griddle using a ¼ cup measuring cup.
5. Sprinkle blueberries on top of each pancake. Cook pancake until bubble appear on top.
6. Flip pancake and cook other side.
7. Serve with warmed maple syrup and or/ blueberry compote
