Apple and Beet Smoothie

If you are looking to add more fruit and vegetables to your diet then this recipe is for you. The beets turn the smoothie into a bright pink.

Our PC Greek Vanilla Yogurt adds protein with a hint of sweetness. This Smoothie is certainly a different breakfast to wake up to in the morning.  For a quick start to your day, roast the beets the night before, cool and place in the fridge.

Apple and Beet Smoothie

Serves 4

4 small beets, peeled cut into quarters
2 cups PC Vanilla 2 MF Greek Yogurt
4 apples cut into quarters with, seeds removed
2 cups orange juice

1. Preheat oven to 375 F.
2. Roast the beets until tender. Remove from oven and cool.
3. In a blender, place the beets, yogurt, and apples. Top with orange juice. Pulse until smooth.
