This menu features: Pulled Achiote Chicken Tostada, with Pickled Red Onion, Queso Fresco, Avocado and Egg; Chiles en Nogada with Walnut Crema and Pomegranate; and for dessert Traditional Mexican Churros with Vanilla and Mezcal Crema $50 per person.

Dessert tables are on trend! In this class Cordon Bleu trained Pastry Chef Elina, of Elina Patisserie, a dessert company that supplies exquisite cakes and pastries to some of Ottawa’s finest restaurants and cafes, shows you how to create beautiful European desserts. Enjoy Christmas Choux Wreathes filled with Vanilla Bean Mascarpone Cream and decorated with red berries; Chocolate Panna Cotta with Blackberries and the delicious Italian confection Torrone, a nougat made with egg whites, honey and sugar. Elina’s Christmas version contains pistachios and dried cranberries.

Ah, Chef Gilles is back and he intends to help you celebrate Christmas in the most spectacular way! Tonight, sit back and relax while the chef prepares traditional holiday dishes he has enjoyed with his family and friends in France. Chestnut Velouté with Seared Scallop; Ballotine of Turkey Fillet with Mushrooms, as well as Mousseline of Celeriac Cooked in Salt Crust with Baby Root Vegetables. For dessert? We saw Ottawa’s own Chef Rene Rodriguez win Top Chef Canada. We watched him Beat Bobby Flay on the cooking show of the same name. In tonight’s class Chef Rene makes some of his favourite Spanish tapas. Enjoy the classic Patatos Brava; Chimichurri Mushrooms; Garlic Prawns with Chives Migonettes and Catalon Bread with Jamon. Take home the recipes and create your own party! $50 per person.
