Tomato Vodka Sauce

This pasta sauce is a different variation on an everyday sauce. The vodka and the cream help to smooth out the acidity. Use it over your favourite pasta, on gnocchi or in lasagna.

Tomato Vodka Sauce

Tomato Vodka Sauce

1 tablespoon butter
1 tablespoons PC New World EVOO Extra Virgin Olive Oil
1 small onion, grated or diced
2 cloves garlic, peeled
1 container PC Black Label San Marzano Whole Tomatoes
1 cup 35 % cream
¼ cup vodka

1. Heat a wide skillet over medium-high heat.
2. Add butter and olive oil to coat the bottom
3. Add onion and sauté until translucent and soft.
4. Add garlic cloves
5. Crush the tomatoes in a bowl.
6. Add the tomatoes to the skillet and simmer for 25 minutes.
7. Add cream and vodka. Stir. Bring to a boil for 2 minutes.
