Spiced Chickpea Vegetable Stew

2 teaspoons PC New World EVOO Extra Virgin Olive Oil

1 cup onions, diced

1 cup carrots, diced

2 cloves garlic, minced

1 jalapeno pepper

11/2 cup potatoes, peeled and cubed

1 can PC Blue Menu Chickpeas

2 teaspoons cumin

1 teaspoon chili powder

½ teaspoon turmeric

1 can PC Blue Menu No Salt Added Diced Tomato

1 box PC Organic Vegetable Stock

 

  1. Heat olive oil in pan. Add onion, garlic and carrot. Sauté for 5 minutes. Add jalapeno
  2. Add potatoes and chickpeas. Stir in cumin, chili powder, and turmeric.
  3. Add diced tomatoes and vegetable stock.
  4. Bring to a boil. Reduce and simmer for 15 minutes.

5, Serve with rice or quinoa.
