Pear Cranberry Tarte Tatin

Pear Cranberry Tarte Tatin

ΒΌ cup butter
1/2 cup sugar
1 vanilla bean
1 cup of dried cranberries
5 hard pears peeled
1 sheet of PC Butter Puff Pastry, thawed but chilled

1. Preheat oven to 375 F.
2. Heat pan to medium heat. Add butter and sugar and cook to a golden caramel.
3. Pour into an 8 inch round oven tin. Cut vanilla bean and swirl contents into caramel.
4. Sprinkle cranberries over top
5. Cut pear in half. Remove the core and tightly pack the pears, flat side down in pan.
6. Trim the puff pastry into a round and place on top of the pears.
7. Bake for 25 to 30 minutes.
8. Remove from oven and cool slightly.
9. Place a plate on top of the pan and carefully flip tarte onto the plate.
10. Cut and serve with chocolate sauce and vanilla ice cream
