In this truffle recipe, we combine dark chocolate with Niagara’s famous Inniskillin Vidal Icewine. And we have eliminate the need to temper chocolate. Instead, the ganache is rolled directly into cocoa powder.

1/2 cup 35% cream
300 g dark chocolate
2 tablespoons Inniskillin Vidal Icewine
3 tablespoons PC Country Churned Butter,Unsalted softened
Cocoa Powder for garnish

1. Bring the cream to the boil
2. Stir in the dark chocolate and cool to 30⁰C
3. Stir in the ice wine.
4. Stir in the butter and allow the mixture to get cold.
5. Pipe bulbs from a plain tube onto paper.
6. When set, form into balls.
7. Roll in cocoa powder
